BRUNCH ISN'T COMPLETE WITHOUT A CLASSIC MIMOSA

Nothing kicks off brunch quite like a mimosa. Since this brunch cocktail only requires 2 ingredients, it’s important to nail every aspect. I’ve laid out my top tips and tricks here to ace every part of a classic mimosa, from the best orange juice to the perfect bubbly. Ready to wake up the right way? How to make a mimosa:

The orange juice. To bring that sweet and tangy flavor you can only find in fresh citrus, squeezing juice from fresh oranges is a must! If you want to squeeze your juice in advance, it can be kept refrigerated in a covered container for up to 2 days. As far as variety, go for whatever you love to eat! Aromatic navel oranges, sweet cara cara, or crimson blood oranges will bring a variety of subtly different flavors and colors. Navel is the most classic, but no reason not to experiment (or mix them).

The best alcohol for a mimosa. To play off the sweet orange juice, we prefer a dry or semi-dry sparkling white wine. Since Champagne can be particularly pricey, a dry Prosecco or Cava will also do the trick. Or, if you’re a Champagne-or-bust type of person, checkout the best Champagne for mimosas. Whatever you choose, be sure to give it enough time to chill before serving.

Tips for making mimosas:

— If you prefer your cocktails on the sweeter side, bump up the orange juice to 3 ounces per glass, or go for a sweeter bottle of bubbly.

— To play up the orange flavor, try adding a dash of orange liqueur, such as Grand Marnier or Cointreau, or a few dashes of orange bitters.

Mimosa variations:
